Bacon in the oven
We no longer cook bacon on the stove, and have taken to always cooking it in the oven. I've found that the bacon cooks more evenly and because it's in the oven, it doesn't necessarily have to be constantly monitored and tended to. Plus, it means I can get the bacon into the oven right away and do my other cooking in the meantime. Preheat the oven to 350 F, and line a baking sheet (or two) with foil. Place the strips of bacon on the baking sheets (don't crowd them too much, make sure they are all laying flat). Once the oven is ready, place the sheet in the oven on the middle rack and cook for 10 minutes. Take the sheet out and turn the bacon over. Return the bacon to the oven for another 10 minutes. For thicker slices of bacon, you may want to let them cook for an additional 5-8 minutes. Take out of the oven and drain on paper towels.

This recipe is from Brunch. I like doing this recipe whenever I have spinach leftover from a recipe earlier in the week. I don't really follow this recipe except for the number of tortillas. The rest is pretty much winging it. ;) The fillings can of course be substituted for whatever you would like to put in. Enjoy!

Eggs poached in the oven
This recipe is pictured in the "Best-Ever Macaroni & Cheese?" post. I wanted to make something different for our brunch and I found this recipe in my cookbook simply titled Brunch by Joy Skipper. I had purchased the book to give me more ideas for Sunday brunch (since I really only do two dishes: pancakes and eggs Benedict...and the occasional waffles). It has definitely given us a few other options for brunch, and I've been slowly attempting the recipes found in this book.
This recipe is surprisingly easy to prepare, and very tasty as well. I broke my "try the recipe written as is the first time" rule, as the original uses mushrooms and not ham. You can easily substitute whatever you want to bake with the eggs, so if you prefer mushrooms, give it a try! Enjoy!

The essential pancakes
I've always made pancakes using packaged mix, so I was pretty happy to find the following recipe in my Cooking: A Commonsense Guide book. I personally prefer making smaller pancakes, but you can of course make whatever size or sizes you prefer. The recipe makes approximately 6-8 pancakes. Enjoy!
