When we were still living on our own, I used to make this dish quite frequently because it guaranteed leftovers for me for lunches. I continued to make it frequently when we moved in together because it was easy to assemble the night before, and then I'd just have to worry about tossing the chicken in the crumb mixture the next day. It comes from 300 Best Comfort Foods book. I love the sour cream taste the marinade gives to the chicken. Leaving it overnight ensures a very flavorful chicken. I've found that the recipe works very well with thighs and breasts as well as drums, so mix and match as you wish. Enjoy!

Yummy enchiladas
This recipe is very fast and easy to make, and it comes from 300 Comfort Foods. The cilantro gives a nice bite and freshness to the dish, very important to use fresh cilantro if you can. The cream cheese and yogurt/sour cream mixture is surprisingly light, just go easy on eating the enchiladas themselves at dinner! We used turkey the first time we tried this dish, and you can also use shrimp if you wish. Enjoy!

My take on Dhital's chicken
This is a family recipe from hubby's Grandma. I decided to attempt the recipe and put my own spin on it. I saved the flour from the chicken for the sauce, which resulted in a much thicker sauce. I also added some white cooking wine to deglaze the pan after cooking the chicken, which adds a very subtle flavor to the sauce (and saves all the yummy browned bits from the chicken and garlic). Instead of devonshire cream, I used sour cream, which results with a very rich and creamy sauce, and adds so much flavor to the chicken. I like to use a mix of thighs and breasts (normally it is only breasts), but use what you wish. Enjoy!

This recipe comes from 125 Best Chicken Recipes by Rose Murray. The original recipe is for one person, but I've since increased the recipe to accomodate hubby's love for anything in peanut butter sauce. :) Like the Greek chicken, this is a ridiculously easy recipe with even more minimal preparation (the only chopping involved is the chicken). I cheat with the minced garlic by using the jar versions, and I tend to do this as well with anything that calls for minced ginger (but I use ginger powder in this recipe instead; I've found the ginger to be too overpowering in the past). Spicy lemon chicken
This recipe is from The Newlyweds Cookbook. I was looking for a new chicken dish, and I happened upon this one. I've been wanting to try it for a while now, and decided that it was time to do so. I ended up marinating the chicken for about an hour, give or take a few minutes. I also chose boneless skinless chicken thighs because I find they absorb marinade faster compared to bone-in. Next time, I will probably leave them to marinate for the day to really give them a chance to absorb the flavors of the marinade. Enjoy!
EDIT: Leaving the chicken in the marinade for a day makes it incredibly tender and juicy. We've also taken to using a mix of chicken breasts and thighs, as hubby prefers breasts and I prefer the thighs. I find that the marinade doesn't get absorbed by the breasts as much as the thighs, but go with the cut that you prefer.

This is yet another easy recipe from 125 Chicken Recipes by Rose Murray. The sauce doesn't take too much time to make, and the cider vinegar gives it a nice little kick. When it comes to using ketchup or chili sauce, I use whatever is available in the house already. The chili sauce gives it more of a spicy edge, whereas the ketchup makes it more sweet. I have been making it more with chili sauce lately because hubby prefers a spicier sauce over a sweet one. Enjoy!

The first time I made this dish, it was my husband's birthday and it was the first time we were celebrating it together. I chose this dish because he LOVES greek food, and I did a little picnic in my room for the two of us. It is probably one of his favorite chicken dishes, and it is RIDICULOUSLY easy to make (yet looks like you spent hours making it). You know, if you're okay with chopping vegetables. Since it only calls for so much yellow pepper, I usually add the remainder to our greek salads, it gives that extra bit of color and crunch. Enjoy!

Easy chicken salad
This salad comes from 125 Best Chicken Recipes. In my quest to include more salads in the meal rotation, I found this little twist on a Waldorf salad (normally made with apples, celery, nuts and raisins). The recipe was fairly painless to make; as I didn't have cooked chicken on hand, I chopped and cooked 2 chicken breasts to mix into the salad. I may try a mix of two different kinds of apples next time and increase the amount of celery as well the next time this is made, as I found the mayo-salad ratio a little too high for my liking. Enjoy!

The first time I made this dish, I was staying over at hubby's old place in the summertime. He was off at work and told me to go ahead and pick up whatever I wanted for dinner. I flipped through his Better Home and Gardens New Cookbook and found this recipe. It's not as spicy as normal Jambalaya, but the spicy factor can easily be upped or lowered to your own tastes. Since we tend not to have cooked chicken on hand, I usually pan fry 2 chicken breasts, already cubed. Enjoy!

A twist on chicken fingers
When I was in university, I used to make chicken fingers or nuggets ALL the time. The breading process was very easy for me to do, and this was a dish that fell under my "if I can cook it myself, I don't have to buy it" mantra. This recipe is a nice variation on your standard breaded chicken fingers, and it's done in the oven instead of over the stove. It comes from 125 Best Chicken Recipes. The mustard-mayo coating is enough to flavour the chicken that you don't need to dip them (but dip if you must!), and the sesame seeds add a nutty flavour to the coating. It can easily be doubled as well. Enjoy!
