Mac and cheese (not the blue box kind)
This comes from the 300 Best Comfort Foods book. The recipe is very straight-forward, and can easily be made during the week. The one thing that I'll be playing around with the next time around is the cheese; I think a combination of cheeses will work much better than cheddar all on its own. I also used deli mustard instead of Dijon to dial down the spicy factor. Enjoy!
*EDIT: I have taken to using a blend of three different cheeses, rather than just cheddar cheese. I use about 1 cup of cheddar cheese, 3/4 cup of Gruyere and 1/4 of Parmesan cheese.

A fast and easy dish
I was looking for a new pasta dish to attempt and found this one in Better Home & Gardens New Cook Book. I had never made a clam-base sauce before and this one is very simple and full of flavor. I ended up using dried oregano and fresh parsley, though I'm sure the fresh can also be substitued for dried. I also used canned clams, as fresh are just not readily available for us. Enjoy!

Sesame-peanut noodles
I love, LOVE this recipe. It is ridiculously easy to make, and it very quickly became a favorite of my hubby's (he's a total sucker for anything involving peanut butter). The recipe is from The Food You Want to Eat by Ted Allen, the cooking expert from Queer Eye for the Straight Guy, and host of Chopped on the Food Network. His book is very much no fuss, straight-forward cooking, nothing too fancy but very classy at the same time. The peanut sauce calls for being done in a food processor, but when I first made it, I used a hand blender stick. It works in a pinch, but food processor is definitely the way to go. I have a Cusinart mini-processor that works very well for this.
The soba noodles were not difficult to find, as the Asian section at Superstore is well-stocked; I use the Farkay brand chinese style wheat noodles from Safeway if soba noodles aren't available. As for toasting the sesame seeds, I try to find sesame seeds that have already been toasted, or I skip that step altogether if I'm feeling lazy. Enjoy! Click the link below to download the recipe.

Easy bow ties
This recipe works well as a very light meal or a side dish. Lately, we've been using it as a side dish, as the portion the recipe makes is small compared to other recipes. It comes from 300 Best Comfort Foods book. I love the creamy sauce, and the nuts give the dish a nice crunch. Enjoy!
