Potato salad
I used this recipe one year for hubby's family birthday dinner, and it was a huge hit. It comes from 300 Best Comfort Foods. The salad does a mix of mayo and yogurt (or sour cream), which makes it considerably lighter in comparison to other potato salads, and the potatoes are tossed in a marinade of red wine vinegar, minced garlic and Dijon mustard before getting mixed with all the other ingredients. I've taken to using baby potatoes instead of regular potatoes. The cooking time is reduced by half, and the potatoes can be cooked whole, then halved or quartered afterwards before being tossed with the vinaigrette mix. Enjoy!

This recipe is from Ted Allen's The Food You Want To Eat. I love the simplicity of the ingredients, and they pack quite the punch despite the simplicity. I use a mandolin to get the potatoes nice and thin; thin slices are crucial to make the recipe work well. Enjoy!

This is my own version of hush puppies using two different recipes that I found in my Food Network magazines. The smoked paprika gives a great smoky flavor to the hush puppy overall, and the corn is a great sweet counterpart. If you don't like too much spice, I would suggest to reduce the cayenne pepper to only a pinch or none at all. If you like the spice, the 1/4 tsp gives a good kick, but you can certainly increase it for a much stronger kick. Enjoy!

A dish that was featured at every gathering at my childhood home? Egg rolls. This is one of the few recipes that I know by heart. It certainly helps that mom taught me how to make them at an early age. They are probably one of the more finicky dishes to make, but once you get used to rolling them, it's completely worth it. Here is the yam recipe I use for our Thanksgiving meals. It comes from The Christmas Table by Diane Morgan. The original recipe serves far more people, but I halved it to accommodate serving mashed potatoes as well. I made the brown sugar in the yam mixture optional, as I feel that would be the best place to take it out if you want less sweet. I've also discovered that if you use 3/4 of heavy cream (which is the original amount for the full recipe), the sauce is much thicker and not as sweet. Enjoy!
