In an effort to use up ingredients that were in the fridge a couple weeks back (and we didn't have any leftovers for lunch), I decided to be creative with Pillsbury croissants (the mini version). I used my mini pizza recipe to fill the croissants. Not terribly ground-breaking, I know, but I'm sure it will come in handy when Miss Nugget is older. :)
First, I sprinkled garlic powder onto each little triangle. I then put a teeny bit of ketchup, followed by pepperoni, grated mozzarella, and dried oregano. I then rolled up each croissant, and topped each one with more mozzarella and dried oregano. They turned out quite well, and tasted yummy too! The one thing that I would change if I were to make these again would be to chop the pepperoni into smaller pieces and sprinkle it all over the triangle to give pepperoni flavor all over, rather than just in the middle. It will likely make it easier to roll them up as well.
This past week, I decided to play around with Rachel Ray's Croque Monsieur pie recipe that I had tried a couple weeks back. I decided to make it into a Cheese steak pie. I substituted the ham for roast beef, and added some fried onions, green pepper and mushrooms as well as sliced tomatoes. I kept the bechamel sauce, but I added about a quarter cup of cream cheese, just to give a little more cheese flavor to the dish. It took a little longer to prepare compared to the original recipe, but still reasonable for a make-ahead meal.
The verdict? Hubby quite enjoyed it; he felt it was more filling with the addition of the vegetables and wasn't as heavy as the original recipe. I thought for sure that adding the cream cheese would make the sauce very rich, but it actually lightened it. Successful experiment! I think my next experiment with that recipe will be a BST ("s" for spinach). I think it will work quite well. Enjoy the week and happy cooking all!
