On Sunday, I tried yet another new recipe, an onion tart. It is found in my The Newlywed's Cookbook, and it is a recipe that I've been wanting to try for a while, but always forget about. Mostly because I usually get a craving for quiche first, and then I suddenly remember the onion tart recipe.
Making the tart was about equal to making quiche: it takes a little more time just to allow for chilling the pastry and rolling it out, but otherwise not too bad. This pastry is much flakier and crisper in comparison to the crust for my quiche recipe. I was a bit dubious about using two eggs for the dough, but it turned out just fine (save for my "oops" of not measuring the right amount of flour at first and having a VERY sticky dough).
For the onion filling, I decided to use red and yellow onions, since I had red onion leftover from the bacon cheeseburger pizza a couple weeks before. I also quite enjoy the combination of the two onions together (that's what I use for onion dip too). I used my technique for the onion marmalade required for some of my pizzas, getting the onions nice and caramelized (though the recipe doesn't call for them to be). I've become a sucker for caramelized onions now that I know how to do it. ;)
The end result? A lovely crisp pastry with incredibly flavorful filling. The crust is very flaky and crisp, and the caramelized onions combined with the eggs and cream tastes divine. Try it for yourself!
