A few months ago, I was scolding hubby at the grocery store for picking up muffins from the bakery. It went something along the lines of "Why are you getting those? They're so expensive. I can make some for you at home!". This of course resulted in him saying something to the effect of "Okay, make me muffins then!". It didn't happen RIGHT away, but he did eventually end up with some coffee-cake muffins, a new recipe that I tried from Better Home & Gardens Cookbook. It was, quite conveniently, one of the recipes that I had on my list of recipes to try. It was probably one of the more complicated muffin recipes that I've attempted, but they were pretty tasty nonetheless. The only thing that I didn't like about them was how messy they were to eat; the streusel topping was EVERYWHERE.
Last weekend, I decided to try and make some banana chocolate chip muffins. I had a sudden craving for something with banana and chocolate, so I figured that was the best way to go. ;) Luckily, I had some bananas in the freezer and TONS of chocolate chips (it's just one of those things that's always in the cupboard). The recipe also called for nuts, and since I had another package of pecans leftover from Thanksgivingpalooza, I decided to use that. The recipe didn't actually call for chocolate chips, that was just me wanting chocolate. It's a great little recipe, and they are super moist They have served us quite well for snacks for the week!
Today? Well, hubby saw a commercial for brownies the other day, so I'm going to make him some peanut butter chocolate brownies (which I've made before). It's been nice to do so much baking; hubby gets worried that it takes up too much time, but I'm quite glad to do it. It certainly helps that there's someone else to help with the consumption of all the baked goods, because it would be very difficult to deal with all by myself. :)
